Mint Chocolate Chip Smoothie

Mint Chocolate Chip Smoothie

This is my most favorite smoothie of all time. It really does taste like a milkshake, and kids will easily go for this one!

I started off with a version that had no zucchini, but then since I’m eating this almost every day, I wanted to see if I could hide another veggie and....happy to report, it worked.

Try this, your life will be better because of it :

  • 1 frozen small zucchini (skin on is fine, it adds nutrition and color), OPTIONAL
  • 1.5 - 2 frozen banana
  • 2 large handfuls of spinach
  • 1/2 can coconut milk (full-fat is best)
  • 1 c coconut water
  • 2 drops food grade peppermint oil or extract
  • 2 tbsp hemp hearts
  • small handful of choc chips or nibs
  • 1 c water
  • 1/2 c ice

Add more water and ice as needed.

Each day’s cooking is a building block for the next day’s meal.

The plan is divided into 2 STACKS, with a BASE BLOCK that begins each STACK. These BASE BLOCKS are the days we cook our proteins and veggies and take only 20 hands-on minutes in the kitchen.

Then on the other days, we change or add to the foods that were made in the BASE BLOCK in order to create 2 more unique meals in each STACK. And get this, those meals only take about 5 minutes for you to assemble.
